What is Pinsa?

Pinsa differs from pizza mainly in its formulation and fermentation. Pizza is usually made with highly refined wheat flours and fermentation rarely lasts 48 hours. In the case of pinsa, a mixture of wheat, soy and rice flours is used, and fermentation lasts 72 hours. Indeed, a long fermentation is usually associated with a more digestible product, and as for flours, rice flour allows the dough to be more hydrated, which in turn makes it crispier.

Pinsa is an innovation of traditional pizza, which does not need a dome oven like Neapolitan pizza, and its dough is more similar to that of pizza al taglio, which is traditionally prepared in an electric oven at a temperature of over 300 °C.
